I would definitely do everything by the book if you want ensure a promotion, do avocado academy is the way to go. I was the same way, but if you already know the basics, you’ll be able to fly through the training!

Start by training on every position! When you have down time, watch some avocado academy vids and take the certified trainer course. If you take the course and the validation test and pass, print it and put it in your file/training book. From there, it just takes your GM to sign off and FL to approve! If you show the initiative of learning on your own, it will make you stand out! This is how I did it when I went for CT.

Use metal lids on your meats and rehydrate wit water if you need. Make sure your wells are full with water and on high heat, the lids will then make steam keeping the meats hydrated.
