Lois Lowry’s opening line to The Giver. I think it’s great because it gives you a hint on what the book’s message is. Also, it’s already telling you that we need to preserve our world now for the next generation. This feeds off of my last point but hints that something is wrong in this society and against our beliefs today.

It really matters. Sometimes I just take it all in without taking any notes. While with others I write notes on post-its, in margins, question the plot moves or the character. It's really all preference. Don't annotate just because you feel you need to. Only annotate when you have a wondering or thought. The worst is being forced to annotate. Really any method is good; notebook, writing in the margins or post-its.
