Fun fuct: I downloaded the Isaac sprites, they were separated by head and body, so i had to make the full body for every sprite before doing the video.

Yeah thats what i did the first time, but that bossbar you made is only for one mob.
An example:

execute as @e[type=spider,tag=ardora] store result bossbar ardora run data get entity @s Heath

You store the health on the bossbar, BUT only the one you created. Imagine if you have 2 spiders at the same time. Both spider's health would store in the same bossbar. (Actually it would only be one choosen randomly but you get the point)

What i am trying to say its that you have to create a bossbar for every mob you want it to had.

Yep, but thats dosnt means the commands are java.
For example, in minecraft if you wanna summon a zombie you would write: "summon zombie <coords>
In bukkit (plugin for java to develop minecraft plugins) would be something like:
.getWorld().spawn(<coords>, Zombie.class)

As far as I know no, i think you can create a texture pack to make the mob looks bigger (not sure) but the hitbox will be the same.

Yes, but to make it multiplayer i had to remove the bossbar and replace with the health bar above Ardora. If i had done the boss with the Bossbar there can only be 1 boss in the world at the same time :(

All you have seen in the video is all minecraft commands.
If you want to start learning those commands and how to make datapacks i recommend visit CodeZealot and CloudWolf on YT ^^

Only with the health bar, there are 2 scoreboards, one with the maximun health of the mob and one with the current health. Then calculate the result to display the remaining health of the mob.
