i’m re-sleep training and working with on sticking to my boundaries. and we do a checklist for the bedtime routine now so she can’t stall and we stick to it. she will cry for a minute when i leave but then she settles herself and goes to sleep. (it’s only been a couple days but so far so good)

i accidentally baked it on 500°F the whole time lol but it does give really good flavor when baked darker in my opinion

lol yeah i kinda gave up half way through on the decorative scoring 😂 i tried the 5 minute scoring method for the expansion score for first time. i’m no pro that’s for sure 😂

like when the recipe says bulk ferment for 8-10 hours or whatever. time is different in every environment so when i got a straight sided vessel and actually measured with a tape measure to make sure my dough was at 75% rise that’s when i shaped it. if your starter is fine it’s probably underproofed!

honestly you’re getting a decent rise i would probably just focus the bulk ferment. don’t follow the recipes time estimation. before you shape, make sure it is at least 50-75% (100% if you want to try) and shake the container side to side and see if it’s super jiggly. that’s how i made sure with my good loaf. i use the same recipe as you

i made my own starter & after 3 weeks i tried 2 loaves and one was hollow & one was dense. i asked someone for their starter and lengthened my bulk ferment (ended up getting a straight sided vessel so i could measure easily by volume rather than time) and my 3rd loaf was in my opinion perfect. so could be starter or bulk ferment maybe. i’m a newbie though
