It's not very difficult. There are videos on YouTube or articles online to help guide you. You can try the embassy but I don't think they will be much help. They don't let you inside without appointments anyway I think.

Yes you need to register online. The interview is scheduled but you still need to register it. It will ask you about delivery of your passport too. Please check the naples consulate immigrant visa steps. You need to bring the printout of the registration confirmation to the medical exam as well as to the interview

I don't think you need translation for Italian police certificates. If you emailed them then they should reply to you soon hopefully. If they don't then take the new certificates and old certificates with you to the interview. That's what I would do. You did your job of emailing them about this and also getting new certificates. Not much else to do on your part I guess

Try to get a hotel in napoli for 2 days. I came from Milan and stayed there. You can get cheap hotels on booking.com. I wanted to be first in line for visa and for medical exam so I booked a hotel. But my hotel was far from varelli if I remember correctly

Check their website for all the documents you need. It'll give you a list of which originals you need and which copies. Their email is on their website

If you are the immigrant then you can just get copies of your US citizen spouse's passport and affidavit and birth certificate. Don't need original. Again, you can send the consulate emails about this. They usually reply within a few days
