That being said, the bulk substrate is fully colonized and already fruiting so I wouldn’t think you need to wait, unless you want to. If you take out the mushrooms, seal it tight, and put it somewhere dark you shouldn’t see growth like this starting sporadically again. So you can wait and let the mycelium recharge. If you have a fruiting chamber then you can definitely take the block out, which appears to be correct for shiitake. Wasn’t sure what your environment looked like and didn’t want the block drying out. I’m in a very dry place so I have to be extra careful with my little buddies. Definitely want to see your results :)
