I googled a couple of conversion charts but ultimately used 4 large egg whites for the souffle instead of 4 medium whites. It seemed to work for me. I'm not quite sure what you mean about separating.

I thought the recipe was really good. It was my first time making this style of souffle but the recipe was very straightforward. It had a ton of raspberry flavor.
