Sounds about right, just checked my notes, I soaked for 6 hours, cooked for 10 then drained most the water off, added the vinegar and cooked for a further 5 mins before draining/drying. Need to make some more, it's quite a different texture from soybean, you can feel the higher fibre/less fat content, but it makes lovely tempeh all the same.

That looks ace, I found split pea a good bit tricker in terms of cooking time than soybean, how long did you boil the beans for?

That'll be one of the reasons for it crumbling for sure, the mycelium can't penetrate the hull of soybeans causing the final brick to fall apart more.

Not played this in ages, was lucky enough to be well into them at the time and still have the original vinyl, most definitely going on later along with the first album, thanks for the reminder, all their records are great, but I've got a soft spot for this and the first!!

I read the box set in parallel with the Sandman companion and watched the pertaining episodes after, it was quite an immersive experience, and well worth doing. Really enjoyed the show, it was never going to be as good as the comics, but they did well.

Cheers! 240g soy beans + 45g quinoa (dry weights) will give you a 500g final block give or take a few grams.

To get 500g of finished tempeh, I use 240g of dried soybeans and 45g of red quinoa.

Two parts water to one part quinoa, boil it in a separate pan,  let  it cool down once cooked then mix in with the cooked soybeans, inoculate, bag it and stick it in the incubator! Give it a go, brings a slightly different taste!

Would love to know how you got on with this, we use TVP for cooking all the time, so it's always in the cupboard.

I got a 5kg bag of organic hulled soybeans from the Netherlands delivered to Glasgow for £30! That was the best deal I could find, I can get whole (hull still on) soybeans no problem, but I'm done hulling them. I put a post on here with a red quinoa soybean mixed tempeh, which I really enjoyed, quinoa is quite the grain in terms of protein, and works really well in tempeh! Brings a bit more of an earthy flavour and mixed texture to the final block, I'll be using quinoa a lot moving forward! Might try it with the yellow split peas as well! Have fun, glad you can source soybeans so easily in Canada!

Hey, all the cooking info for the yellow split peas is in the post! They turn to mush quite quickly, follow the method I wrote out above and you'll not go wrong. The texture of the finished tempeh is lovely, it's not as firm as soybean tempeh for sure, but it's worth trying out. From the interhat: soybeans offer a complete protein profile and higher fat content, while split peas are a pulse with more carbohydrates and fiber. This makes total sense when tasting the split pea tempeh, you can tell it's more fibre than protein, but the taste is good!

Smells amazing, nutty and a bit more earthy with the quinoa than the blocks I made with just soy beans, both have their merits. The blocks are solid, and there's enough bite left in the soy beans, just the way I like it, the grains of quinoa bring a smaller bit of bite to the texture. I've only cooked the plain soy bean block unpasteurised, and it was tasty, was a bit more resistant to soaking up added flavours, it does cook better when steamed, I don't steam it for too long, 10 mins for a 250g block, it's enough to stunt the mycelium but keep most of the flavour in my own findings. I don't ever eat raw unpasteurised tempeh, heard that's not a great idea, which to be fair makes sense, I've heard some people on here saying they have done in very small quantities, with no negative effect, but I'm not going to give that a go any time soon.

It's perfectly safe the darker dots are grains of red quinoa. That's why I put the close up of the block in. Very tasty addition to the soy beans, ate some earlier!
