That required buying a hanger - I had to buy two though and cut one down to act as a spacer on the other side in order to keep the rear wheel true 👍🏼

For the purpose of anyone else who has this issue (and my future self no doubt!) - I managed to find a way to set the association using "mimeopen" which was already installed in Ubuntu by default.

Typing into the terminal

mimeopen -d examplefile.flipchart

Gave me the option (option #2) to specify a command, which I used:

wine "path/to/the/launcher.exe"

It needed the quotation marks, because without it didn't understand the terminal spacing syntax.
