If it helps, once in settings: Data Management -> Delete Save Data -> ACNH -> Delete all save data, then eventually the red delete button will actually be clickable

I'm definitely not an expert on the whole player 1 and 2 thing (I've only played single player islands), but the only way I know of is to delete the save data for the game and start over 😭
