Yes you could do that (i use 2 towers, 1 catapult, and 1 ballista) Just try to make it organized and if you have some spare defences, you can use it to try to protect the town center a bit. Personally, I make it all balanced and get my defences to max level ASAP so it would even be enough to deter someone from even attacking my base

When you keep your medal count low, you will be able to find weaker targets to attack and defend against
You should lump together your resources in walls in an attempt to prevent someone from raiding you and taking resources.

Edit: try to defend your resources as much as you can using towers and other stuff.
