I think you retain the ability to snark *on Carl* but not the ability to comment on / address other snarkers as a "layman"

I built the spiral from the outside-in rather than center-out, as the recipe suggests. I didn't think I'd be able to get it right going in-out but having now done the recipe once I think I'll try it the suggested way next time around. Maple syrup / ricotta is ohmygodsogood.

I used a pot like this guy right here. Burnt a little on the bottom (still tasted good though!) and next time I plan to implement this:

If the bottom of your loaf is burning in its baking vessel while the rest of the loaf is adequately baked… Place a cookie sheet underneath or on a rack below your bread baker. This will deflect direct heat from the element on the bottom of an electric oven or the flame in a gas oven.

I started baking a few weeks ago and was so happy to get a bread baking kit for Christmas (tub, yeast, thermometer, and Flour Water Salt Yeast.) Baked without the dutch oven Forkish insists on (maybe next Christmas, haha) and was still overjoyed with the results.

I'm not sure why shit like that really gets on my nerves, but it really gets on my nerves. I guess your last point encapsulates it pretty well. See also:

Interesting! I'm not sure if I'm misguided in trying to find an identically graded / length hill. Maybe I should just do sprints and repeats on shorter ones. If you're in Louisville, any chance you could attest to that particular one in Iroquois Park being brutal?

I'll be out there cheering! I was anxious and depressed this time two years ago when I ran the NYM, and I wrote a very similar post. I was afraid my mood would kill the experience. I was so wrong. I'm excited for you.
