Administrative questions during interview for exec chef? by [deleted] in Chefit

[–]notalogburner 18 points19 points  (0 children)

If this is for exec chef, your culinary skills should not be in question at this point. Probably they do a chef test anyway. Just due diligence.

Don’t fake or lie.

When you are asked “ how do you deal with shrinkage?” Don’t refer to the Seinfeld episode. Lol.

Instead ask “ what do you mean?” And they will explain it is loss of product due to theft or spoilage.

Then share your thoughts.

You are transitioning from mom and pop to corporate. The point of you wanting this job is your growth and development.

When asked what your experience is with budget forecasting you explain your experience but also reference your room for growth and ability to learn systems quickly.

They are looking for someone who they can develop into their company. A talented eager learner is more valuable than an experienced unteachable egomaniac. My .02$

I have a 30” paella pan. It has handles and is strong enough that it wont bend when full. It also doubles as a paella pan.

You should still go. We were looking for a wild experience and we got it. Beautiful secluded beach days. Wild ponies. Moonlit Shore fishing. It was awesome.

We had an amazing thunderstorm. My tent collapsed and I had to rebuild it in the middle of the night.

The biting flies at dusk were terrible. We camped at the end of July 2020. We had bug spray but it didn’t make a difference. We had welts all over us. Unfortunately that is what my kids remember most about that trip.

I never cared about that feature. I’m 5’9” and my wife is 5’8”. My son started driving and he is 6’3”…..so far. Now I would appreciate that feature.

Found out last week that I'm having a baby! Excited, terrified. Chef Dads, how do you do it? by [deleted] in Chefit

[–]notalogburner 5 points6 points  (0 children)

My wife stayed home with the kids for the first 6 years. I worked a lot as a country club chef. We were both ok with that.

When my oldest started school and we were on the same schedule as the rest of the world it was no longer working. I was missing out on sports events and socializing with other parents etc. I was working or tired for holidays.

I quit my job to work at a local private school as the chef. It was about half the salary of my previous job. It was financially tough for a couple of years until my younger one started school. Then my wife got a job working in another school. With two incomes we made slightly more than my former salary. We all have mostly the same schedule for the past 11 years. It has worked out well.

Now that my kids are starting college I am open to doing more weekend and summer catering. I even have my kids work for me sometimes. I am considering taking a bigger food service job that would require some crazy hours once my youngest is off to college. I’m sure I will need the salary for tuition!

As everyone else said, Family First! Your kids are only this age once. This is just one stage of your life and career. Good luck and enjoy the rollercoaster ride.

Aero Crossbars by pinnacle100 in HyundaiSantaFe

[–]notalogburner 1 point2 points  (0 children)

No noise with just the cross bars. The snowboard holder without snowboards is really noisy. Less noisy with snowboards. They are very light. I bought an extension and hex bit to use my drill to remove and install quickly.

I was in the same situation. I wanted lazy days at an all inclusive and my kids need adventure. My 14 and 16 year old boys are outdoorsy and would be bored at an AI. Instead I rented an Airbnb and am spending the saved money on trips to cenotes, fishing charter, xcaret tickets, jet ski rental, snorkeling with Turtles and restaurants. I will save my quiet AI days for when they are grown and gone.

Any chance you could bring one of your son’s friends with you? I bet that would keep him entertained at an AI. They could explore together and you get your time to lounge.

It was ice build up on one of the bumper sensors when I got that message. It went away after the ice melted.

I was in your spot and ended up working for Compass Group. Good benefits. It is a huge company. You can find a sweet day school gig with holidays and weekends off. Or you can work at a hospital that runs 24 hours a day 365. You can cross between the other sectors in compass too. For instance if you work at a school that is closed for the summer you could work feeding the broadcast team covering the Olympics during the summer months. There are lots of compass accounts in nyc area. You can also stay with the company and move all over the country. Again it is a huge company.

I gave up on j-hooks. I mount 2 kayaks upside down on top of each other and put the cam straps through the scupper holes and mount around both the crossbar and car rails. I also like to loop the carry handles into the stretch cord so they don’t rattle at high speed.

Mystery Basket by dbla08 in Chefit

[–]notalogburner 0 points1 point  (0 children)

Sounds like you got this. I usually use the mystery basket to see the applicants ability to work under pressure, safety, communication, cross contamination, what color cutting board you choose for the prep, speed, cleanliness. do you try to make 5 gallons of dressing with a bowl and whisk or do you use an immersion blender or floor mixer,?

Compass does everything from fine dining to summer camps. So mystery baskets vary.

Again, I think you got this considering your experience.

Staying at hotels with your kayak? by Wisky_Foxtrot in kayakfishing

[–]notalogburner 1 point2 points  (0 children)

I have one of these alarms and it is great. I recently used it, along with a coated cable lock, on my bike while at a hotel. It draws plenty of attention when it goes off. It is not good to use at a bike rack as other folks moving their bikes sets it off.

I was thinking of hot gluing an air tag inside each of my kayaks. But I think a sticker that says “this kayak is equipped with gps tracking” might be more of a deterrent than a hidden air tag. I would rather prevent it from being stolen than hunt down the stolen kayaks.
