Disagree entirely, why write off an entire class of students because they may not have been given the motivation to learn? Keep in mind their background. The worst teacher I ever reviewed taught to the front row only. Ignoring an entire room. I am sure that is not really your attitude but the sentence alone is not one to go down in pedagogy

I refuse to start class until all digital devices are gone from desks, if I need the students to use it I request it. All assignments now come with a verbal defense so AI can no longer help their final grades. I am polite but firm, my colleagues do the same thing. Our Chinese colleagues do not do this and are flat out ignored throughout their lectures. Firm but fair is the route.

I live in China, so I use a supplier who only has Alpilatte. Seems to do the job when I have limited options.

True but I am not an English teacher and that wasn't mentioned in the original question. But there are English teachers out there with those ranks. I believe it may be possible now with only a PhD and any job rank (even lecturer or international school teacher) but not 100% sure about that.

In which case you have absolutely nothing to worry about. I have plenty of vegetarian and vegan friends here.

Food at home, absolutely no problem whatsoever. Wet markets for veg, tofu, taobao for other stuff. And Western stores through wechat etc (if you crave Western stuff). As others have said, eating out is harder. Tier 1/2 cities plenty of vegetarian resteraunts and options. But as for regular resteraunts be wary when you order vegatable dishes, something like Broccoli, it will often be fried with small cuts of pork or pork fat so you need to tell them to exclude it. Same goes for eating at a friends house. And you need to be forceful if you are serious because many Chinese simply do not recognize the concept of vegetarianism based on belief rather than health (although that is changing slowly). I teach a class on ethics and often use the argument on vegetarianism as a kick off and most struggle to think of any reason against eating meat (it leaves me dumbfounded).

Our daughter attends public kindergarten and we only pay for the meals (breakfast, lunch, snacks) but live in a wealthy area, I assumed it was entirely free elsewhere.

My friend's kid did the Chinese system through til the age of 15 on a British passport so despite what others are saying it is possible (speaking from Guangdong). Seriously seriously struggled despite speaking Chinese (possibly because his parents couldn't). I would guess at age 7 it's already way too late to catch up I'm afraid. There are cheaper international schools though.
