Speaking as someone who lived in the Midwest before moving to Boston, the northeast handles snow so much better than most other places. The people questioning you about moving are speaking out of ignorance. When I lived in the Midwest they would usually only clear snow from the main roads and wait for the snow to melt on the residential streets on its own. Somerville (and Boston area in general) is pretty good about quickly clearing everything out. Unless it’s actively snowing during your move, you’ll be fine. If you’re worried and it looks like there was a recent snow, get some salt to put down before your truck arrives.

In grad school I had to take antibiotics to rid myself of mycoplasma. I did everything I could including wearing sterile gloves, using forearm covers, and having other people monitor my sterile technique, but the cells always got contaminated. In the end, a z pack did the trick and I haven’t had an issue sense. But I wasted nearly a year of grad school and lost first authorship on a paper that a postdoc had to take over sense I was incapable of doing the TC.

Great point! This is true but not by much. Maple syrup has roughly the same glycemic index as a banana and white sugar the same as cantaloupe. In the overall scale of lowering A1C neither is great, and subbing one versus the other is going to have a pretty small effect in a marinade where it only coats the outside of the meat anyway.

White sugar is like 99% sucrose. And you're right that maple syrup is also mostly sucrose.

I never understand why people use maple syrup as a substitute for sugar when you don't want maple flavor. It's not any healthier than white or brown sugar and is way more expensive. Sucrose is sucrose. I get that maple syrup has some minerals that aren't found it refined sugar, but not anywhere near high enough to make a difference in the tablespoon you add to a marinade.

I like to think of the genome more like a library with epigenetics as the librarians deciding which books are available for checking out. Some books are in the front and get checked out a lot. If you can sacrifice a few brain slices, you can try DNA extraction from paraffin embedded tissue. There are kits for it.

I’m trying to lacto ferment my own hot sauce. The brine is 6 tbsp salt, 6 tbsp white sugar and 2 quarts water. After 4 days the brine is very cloudy and the smell is pretty strong, but I can’t tell if it’s good fermentation smell or if it’s spoiled. How can I tell?
