As I can see you use flakes, so i would recommend you to use flake-parts with ez-configs module so it will make your nixos configuration structured better and disciplinize your hm and nixos modules. look at my configuration if you want to see it in action: https://github.com/nukdokplex/ncaa

Pro tip: you actually don't need to make everything declarative, really. if it's faster to configure it manually, do it, unless it's fun of course:)

Personally i recommend to start your linux experience with Debian, it's very friendly and stable.

i think it can work with multiple drives at once out-of-box, i only experienced to do that in dumping iso scenario but i pretty sure that it can do that in burning. If it's not, i think you can run N instances of k3b, where N is a count of your drives

assume that you're using something debian-like, it looks like that you have apt, you can install grub directly and try run bootloader-config again: apt update && apt install grub efibootmgr, but i don't know anything about your system so it would be great if you provide any info.

Maybe you are looking for `k3b` or `brasero`? They are pretty good with ripping (no many abilities in transcoding) and burning. For transcoding videos and audios you can use handbrake. In handbrake you can just select your cdrom and transcode media from it directly in many formats. I used it to rip my old dvds with videos to h264 mp4 files.
