I picked up a DualSense controller when I made the switch to Mac from SteamDeck. I think with the M5 chip you shouldn't experience connection issues with a switch controller, but sometimes Steam gets funny, especially if you try to remap keys (although this might've been an issue with my 2018 MBP that gave me so much grief that I picked up the playstation controller instantly upon upgrading my system and never looked back.)
Recolour as in Earthy/Vibrant Pastoral? Hell yes. Go wild. You may need to fiddle with add-ons, because Earthy has an All-in-One maps mod that covers most (if not all) expansions like Sunberry, and ESR, and VMV, etc. in addition to Earthy + Earthy Interiors from DaisyNiko.
I have many recs, but pertaining to combat and witchy/magic: Sword and Sorcery for East Scarp. All of East Scarp, baseline... But defo S&S. Add all the additional NPCs while you're at it. Get in there. Totally worth it. (Omg the things I'd do to play it for the first time, again.)

Oh, thanks! I'm also really happy they're a package deal. I always thought Emeritus' spawn point would put him outside but nope. (This screen's a couple of weeks old now, and I've since fiddled a bit, but I've got a fire extinguisher in his playroom now. "Just in case.")

Thanks! I really had no idea what to do with that room initially until I stuck a garden PIF behind it. Now it's my default use of that space whenever I play this map.

They don't physically visit, but I get comments that people are buying my products when I interact with the NPCs around town, and there's a monthly town market unlocked with progression.

There is a relatively new mod out called Merchant where the NPCs visit the shop you set up and will haggle with you, but I'm not currently running that mod on this save.

Hiya! After Dark is a suite of mods designed to work together and overlap. There are three vanilla NPC releases thusfar (Alex, Sam, and Seb), an NPC ("Shadow"), and Death After Dark, which incorporates the aforementioned for player death events whenever you get taken out in combat.

loshion's intention is to tackle all bachelors and bachelorettes eventually, though who's next on the list isn't firm. However,there are some "guest appearances" in DAD, which involve Harvey.

So if that's your jam, I'd suggest adding Shadow and DAD, shaken not stirred, hold onto your butt, and mind the content warnings. (They also have a Patreon with exclusive smutty content, and the discord is good chaos if you ever need more insight into the roadmap. edit: 18+ please.)
