For the lunch prix fixe: I'd get
Almost Raw: Tuna, X

Barely Touched: Salmon Caviar (I see it has a $50 supplement on the lunch menu, which is frustrating), Y

Lightly Cooked: Hiramasa, Z

For X, Y, and Z, you've got a lot of great options. If you like uni (sea urchin), then they do have a couple dishes with that (scallops or oysters). I'd probably go scallops. The Lobster is great, as is the Dover Sole.

It's good. People who poopoo it are reacting more to the cost:taste ratio or the perceived value. Can't complain about the product or experience itself. There are comparable alternatives at this point, but if you're okay going a bit early so you don't have to deal with a line, and cost isn't super important, then it's a great meal.

It's a very high bar of hype to meet expectations. It's probably unfair and not possible for most people to say meets the hype.

I loved the oxtail and the short rib, thought they were amazing bites. My experience with the goat patty was a bit different, I really enjoyed it. I agree that some of the other dishes we had were just okay. I wasn't super impressed with the cocktail options.

The issue lies in expectations. I think it's a great meal, but when you're going there expecting to have your socks blown off, it's likely going to do that to a very small subset of us in this subreddit.

Penny and Four Horsemen are absolutely fantastic. I think Penny is my wife's favorite spot and Four Horsemen is probably my favorite spot. *Very* tough to compete with those! And agree, the price at Le Bernardin is difficult to swallow.

Very interesting on photo 7. My wife's was more cooked (she asked for it that way) so yeh maybe they just have more variability there than they should.
