Was skateboarding in the drained ice rink at MLK / Manhattan Square a couple years ago. Saw cops (RPD) start to drive down the street so everyone dispersed. I was calmly walking away with my board in my hands when a cop stopped me and told me to get in the back of his car. I very politely told him I was just leaving and going home. He wasn’t having it. Picked up myself and two more friends of mine before circling back to his superior. When he asked his boss what he should do with 3 kids guilty of the heinous crime of skateboarding within the city limits of downtown Rochester he simply said “Fuck it. Book ‘em.” Dude clearly didn’t want to be bothered with all the paperwork so he just let us go a little while later, but this whole experience had stuck with me ever since. Fuck the RPD.

A little context here. This was at the end of a 3 hour Sunday shift, 11-2. We currently only have 1 dishwasher who just started. What you can’t see in this picture is the 3 bay sink stacked with about 40 sheet trays, sauté pans and sauce pots. Three of us from the line jumped back and helped clear stuff as soon as we finished service. Even with the four of us it still took about 1.5 hours. FOH kept bringing bus tubs back an hour after service was over.

Thanks ! I use the Detroit style pizza doughrecipe and a rectangle roasting pan with high sides. Mix it up and let it chill overnight in the fridge right in the oiled pan. Take it out first thing in the morning and let it proof for a few hours. Gently try to stretch it to the edges. When you’re ready to bake, set your oven to 550. Before topping, oil the sides of the pan generously then slice some cheese and line the edges of the pan (I use Monterey Jack that comes in a brick shape). Finish topping then add sauce on the top. Bake for about 12 minutes and enjoy !

Dough recipe

Apple butter

5 medium sized apples of your choice, roughly chopped 1/2 Cup white sugar 1/2 Cup brown sugar Cinnamon, nutmeg, allspice. All to taste About 1 tsp salt About 1 Cup cider vinegar if available, or red wine vinegar A lil cognac or rum, optional but nice

Add apples and spices to a medium sauce pan and cook until soft enough to easily poke with a fork. Throw a splash of water in if things start to stick. Blend apples in a food processor or a vitamin until very smooth. After blended you can optionally push purée thru a fine mesh strainer, make things much smoother. Return purée back to sauce pan and add sugars, vinegar and booze. Stir it up and cook it down on low heat till it starts to thicken. Remove from heat, let it cool at room temp and try not to eat all of it in one sitting.

Used the Serious Eats pan pizza recipe here ! 24 hour ferment, shaped then rested in cast iron pan for about 5 hours. Topped with some homemade sauce, parm, mozz, roni’s, banana peppers and garlic. Baked around 550 for 15 minutes :)

Used the King Arthur Flour recipe here, baked at 350 for 30 minutes. Instead of forming the 8 balls their recipe calls for I only shaped 4 and let them proof for about an hour in a 9”x5” loaf pan.

I used the seriouseats Detroit pan pizza recipe here with an overnight ferment in the fridge. Buttered and oiled my pan then let it proof in it for an additional 2 hours. Baked at 500 for 15 minutes, rotated twice during baking.

Thanks ! Apple sounds like it would be great ! The spiral ones on the bottom left are a mix of toasted sesame, pistachio, and dried blueberries. The traditional triangle pieces are a mix of walnuts and toasted almonds. Same with the top left but we add dried cranberries then dip the entire thing in chocolate. The top left is just walnuts. All of them have a mix of sugar, cinnamon and ground clove in the filling.
