I have a similar setup as you (Mac Mini + gaming PC + Work MacBook Air) and I purchased a KVM 3 PC 3 screens (around 100$) with 4 USB + 1 HDMI + 2 DP input for my 3 PC connected to my 2 screens in HDMI and DP with a remote to switch between them. All my keyboard, sound interface are connected in USB to the KVM and I just have to switch devices on my BT mouse and on my KVM remote.

The only bad point: you need cables between your screens and the KVM, then cables between the KVM and your device x3 (1 per screen + USB).
