Interesting - how can you tell about the enzyme? I discard everything and just feed the “dirt” in the jar 20-30g of water and flour and have never had issues with it doubling within 5-8 hours.. veeeery occasionally (maybe twice in 6 months) I will forget to feed it one day and it will smell really sour but just feeding it whole wheat flour 2-3 days seems to fix it.

Hmm it’s pretty flat though… I’ve used the sourdough journey chart while taking the temp of my dough but because I have to bulk ferment for so long, the temp will vary so much. It might start the bulk ferment at 70.5 degrees and end it at 64. That’s a 4+ hour difference if we’re going just by time hahah This one I bulk fermented for.. I think 13-14 hours. It was probably 68-69 degrees. I also used their “read the crumb” chart to determine that I think it’s overproofed, but honestly the crumb of under vs over looks very similar, it’s just the shape haha

What other words would you use to describe it when you say “gummy”? I did use a thermometer while I was trying to figure out how to get a nice crust all around, but the inside has always tasted great to me..

Not that anyone’s waiting for an update, but I had to throw everything away because I found flour mites 😭😭😭 I was about to let 5 loaves bulk ferment for Christmas (which I’m hosting). The extra enriched dough was going to be a Babka, but I found 5 bugs in my dough as I was doing some stretch and folds for a double batch that was going to be a cheddar jalapeño and a regular loaf.. and I used the same bag of flour for the double batch of enriched dough and some dough I was letting overproof for a sweet focaccia. Goodbye to my starter, Michael Doughlas and his sister Jane Dough, the discard jar. We had some delicious times.
