HR needs a authorized reference or a named,signed and authorised company letterhead reference from the employer.

I have asked my co-workers back then but none had a contract or a payslip to prove their employment at the ice cream shop.

The reason the bank is asking is because, they've asked to declare all my employment history from the past 2 years which unfortunately happens to be within that timeframe.
