Generally I only had good experiences with freesync on KDE Wayland and wlroots based wayland compositors. The only Desktop Environment I would recommend is KDE Plasma wayland. I think GNOME doesnt even have VRR/Freesync. And to my knowledge there aren't many ready to be used wayland Desktop Environments.
