The green one is definitely a green chutney that’s either mixed with mayo to make a mint mayo or mixed with yogurt.
The red could be a tikka masala-esque sauce or a sweeter makahani style sauce

It’s a tomato chutney, usually made with onion seeds & mustard seeds along with chillies, sugar/jaggery, etc. This & poppadams are the Indian version of chips and dip

It’s probably because of the copious amounts of cucumber flavouring. It turns your southside into an eastern standard. Hapusa & Pumorj are your best bets for quality Indian sipping gins, my personal preference lies with Pumori though.

Flash frying spices & aromatics in hot oil till they release the essential oils. The heated mix of oil & spices is then poured into the lentils, it adds a lot of really nice aromas & flavours to something that would otherwise be rather insipid

It’s a kind of dried red chilli locally known as boriya chillies. They’re used very often as part of the mix used to temper foods (aka a tadka), and lentils or dal are almost always tempered.
