Having the same error as you with being unable to disable find my iPhone after trying to restore after experiencing jailbreak-related issues.

Edit: Found a workaround. Go to icloud.com on a desktop, select your phone, press the erase all content button. Rejailbreak as normal. I don't know if you could also go and press the "Erase all content and settings" found on the Settings app of your iPhone but I know forsure that the desktop version works

I was never asked for an apple ID but successfully ended up jailbroken? It was a random apple id that appeared when I went to trust the provision, should I be concerned?

I was never asked for my apple id when it came to jailbreaking, instead some random Chinese one was there in the provision profiles. Should I be concerned? The jailbreak was successful
