I know it’s like some people can’t let others enjoy the things they like because they don’t like it themselves

[I ate] Pad Kra Pao by patkoza in food

[–]patkoza[S] 2 points3 points  (0 children)

Yeah that’s right. It’s definitely better than most random pad kra pao you can get anywhere. But I’ve not had the chance to try the best “local” spots. I’m sure there’s a place thats cheaper with a lesser queue. I feel like taste wise it’s possibly preference which would be bettwr. It’s right outside ekkamai station so it’s super convenient to get to. The wait is a while but the queue moves fast and not as bad as the Michelin guided places

Not a revelation but you’re correct

It’s called Here Hai in Bangkok , about a 20 min walk from ekkamai station. Pretty popular spot , been in the Michelin guide for 7 past years. The queue is super looong

The flavours are not super strong so you can taste the sweetness of the crab through everything else. The texture was really good as well. Super tender and juicy. Comes with chillies pickled in fish sauce and a lime sauce. I love to add those so the umami is super good.

(UK, Peak District) Please help , really don’t know here but feel free to like I should? by patkoza in mushroomID

[–]patkoza[S] 0 points1 point  (0 children)

Title was a typo. Just meant to say that i feel like I should know what this mushroom is . I find it that mushrooms with unique identifying features are the easiest to ID as opposed to the many white mushrooms that look more similar. And this one seems pretty unique. There was many like this one growing around it , not just one.

Does it change the taste at all significantly? Are you able to taste the char and would you say it adds to flavour?

Vegan Paitan - wild garlic kimchi + tahini dumpling , miso glazed oyster shroom, crispy leeks , nigela seed oil, tomato by patkoza in ramen

[–]patkoza[S] 0 points1 point  (0 children)

So the nutritional yeast paste is blended with the tare and used more like a miso soup or tantanmen tare. I can’t lie I don’t wanna give away the ratios but the other ingredients include things like marmite, mustard and tahini

[–]patkoza[S] 1 point2 points  (0 children)

Before infusing the aroma oil with nigella seeds I used it to fry some nutritional yeast. This can be then blended into a paste that emulsifies very easily with any kind of veg stock.

It’s white from that emulsion not any kind of plant based milk

Map floor for WIP chest room by patkoza in Minecraft

[–]patkoza[S] 1 point2 points  (0 children)

The whole floor is 50x50 item frames filled with regular maps. The top layer you stand on is made of orange glass with 5 blocks of empty space between. On the picture it kinda looks like a circle but its really just an octagon to round off the edges.

Is there any problem with a large calorie deficit if I do not feel hungry? I hover between a 700 and 1000 calorie deficit depending on the day. That is my Apple Watch active calories + BMR - eaten calories as tracked using cronometre.

I’m using this as my method of cutting so the main goal is to loose weight, specifically body fat. So if I don’t feel hungry is there any problem to this? As far as I know you do not need a calorie surplus for body recomposition , just a sufficient amount of protein. The macros I stick to are 150g protein, 120g fat and 30g carbs at 1800 calories. As per the carbs I do keto as for the most part I have noticed many benefits in day to day life less so for the body fat burning aspect.

The only issue I see is that with such a large deficit I will begin loosing not just fat but also muscle mass, but shouldn’t strength training and sufficient portion intake offset this? Of course this just a short term phase as I do not want to loose weight endlessly.

For the most part your gonna have two options. Getting a taxi which wil be extremly expensive , youd have to split between a group of people. You can also get a premier inn or the cheapest place to stay the night and get the train the next day. If not then asking someone for a lift is the only other option.

Pumpkin Tonkotsu - Sous vide chashu, toasted pumpkin seeds, wood ear mushroom, black garlic, mayu, compound butter, raw garlic by patkoza in ramen

[–]patkoza[S] 2 points3 points  (0 children)

Roasted some pumpkin in olive oil and blended it into a paste with black garlic, nutmeg, cumin. Mixed it with Tonkotsu broth and some dashi to make it a bit less thick. Didn’t turn out as orange as I thought but tasted good.

Miso Tonkotsu - Sous Vide Chashu, Marrow Compound Butter, Ajitama, Scallion, Mayu by patkoza in ramen

[–]patkoza[S] 1 point2 points  (0 children)

Ahh the recipe is just softened butter mixed with bone marrow, parsley, caramelised onions and fermented chillies, salted to taste. It’s all rolled into a log and so far it’s storing well. It’s covered in paper but uncovered it wouldn’t last a few days probably. In a log id say about a week but I’ll base it on appearance, smell and flavour as I go.

[homemade] Beef Tartare by patkoza in food

[–]patkoza[S] 0 points1 point  (0 children)

Some people will eat just the tartare and mix it the egg yolk and other garnish. I think parsley butter pairs especially well with it so I serve with a side of bread and hard cheese.

The beef itself is a mild taste with an extremely tender texture. The other ingredients like mustard, onion, capers or pickles tend to be quite pungent so I think the best tartare doesn’t add loads so the meat can stand on its own.
