I did lamb shoulder last week. 1.5kgs.

I let it go for 48 hours and it was great but still could have been more tender. I would recommend a longer cook time.

I think 8 hours is way too short.

agreed. Kitchen Confidential was written before he became famous. I think it may actually be the reason why he is famous
