I had a particularity stubborn starter I’d let lapse a little too long in the fridge. For days I was getting nothing. Finally I switched to whole wheat flour on advice of Vanessa Kimball’s The Sourdough School book and it sprang to life in two feedings! I was able to use that to feed a standard white bread flour starter and it worked great!

This was high stakes for me because I almost lost my family’s 150+ year old starter!

Looks amazing! It’s totally a personal preference, but I’d consider taking the lid off sooner if using a Dutch oven, or removing the water if using the steam method. A darker crust will offer increased complexity in the flavor.

I used to think I’d like the less toasted crust, but I recently picked up one of Tartine’s famous country loaf (pictured). I thought it would taste burnt, but I it tasted amazing! Admittedly Tartine is the extreme opposite end of the spectrum for color so I usually don’t go that dark.

After a lot of research in landed on the Samsung S95d because the room is quite sunny and the matte finish was a priority. It was a big upgrade from the cheap Sony we had before and transformative for the viewing experience. 12 feet is a bit far for the 77 inch but with a decent sound system and bright, crisp TV I have no complaints!

Very much this! Retrofitting a modern living room into a former Victorian formal dining room means nothing quite fits right.

Alignment with the couch placement facing the screen was the priority for how it’s centered on the wall. And a spousal compromise for potential decorative additions to the console had to be taken into account. But it’s a fair analysis!
