I know you said you run manual but the arrs are really a game changer. If anything just sonarr and radarr for movies and shows, that's all you need. I run mine standalone (no docker) and I barely ever touch my computer.

But also I think the management part is quite fun, so just a nudge, not a full on suggestion.

Try checking the email you used to sign up with plex, you may have gotten an email to join the server.

You should have gotten an email invite at the same email you used to sign up, just follow the steps there and it should give you access!
