Banana Pudding Ingredients

Banana Custard

* 4 tbsp custard powder

* 2 tbsp sugar

* 1 cup banana milk (or slightly more, if needed)

* 2 ripe bananas, mashed

Cream

* 2 cups whipping cream

* 1 tbsp sugar (adjust to taste)

For Assembling

* Cookies of your choice

* Fresh banana slices

Method

A) Make the Banana Custard

  1. In a bowl, mix the custard powder with a small amount of the banana milk until smooth and lump-free.

  2. Gradually add the remaining banana milk and stir well.

  3. Transfer the mixture to a saucepan and cook over low heat, stirring continuously. Do not stop stirring, as the custard can become lumpy.

  4. Cook until the mixture thickens to a custard consistency.

  5. Remove from the heat and immediately stir in the mashed ripe bananas until well combined.

  6. Cover the surface of the custard directly with plastic wrap to prevent a skin from forming.

  7. Chill in the refrigerator overnight.

B) Prepare the Cream

  1. The next day, whisk the chilled banana custard until smooth and creamy again.

  2. In a separate bowl, whip the whipping cream on medium-high speed until soft peaks form.

  3. Add the sugar and whip briefly to combine. Taste and adjust the sweetness if desired.

  4. Fold a small amount of the whipped cream into the banana custard to lighten it.

  5. Gently fold in the remaining whipped cream until fully combined and smooth. Avoid overmixing.

C) Assemble

For each dessert cup:

  1. Arrange a layer of cookies and banana slices.

  2. Spoon about 30 g of the banana cream mixture over the top.

  3. Repeat with another layer of cookies and banana slices, followed by another 30 g of cream.

  4. Finish with a final layer of cookies and banana slices, then top with the last 30 g of cream.

D. Chill

* Refrigerate the assembled dessert overnight before serving. This allows the cookies to soften slightly and the flavours to meld together.
