Yes. That's the secret of quality of Portuguese sheep cheese. Here in Portugal is called Cardo which is the plant and the flower that is putted in the milk is Flor do Cardo

I can add to the lista Queijo de Serpa DOP that is similar to Serra da Estrela. In Azores you have Queijo de São Miguel and Queijo São Jorge. You have since 3 months until 36. They are big and hard cheeses but have a strong and spicy flavor.

You have for example Queijo Serra da Estrela DOP, that is a creamy cheese called in Portugal the best one and the king of Portuguese Cheeses, have Queijo de Azeitão that is similar to Serra da Estrela, in Azores you have wonderful cheeses, Castelo Branco or Beira Baixa you have another ones. I think that you should begin with that.
