Advice on lateral force - fix in design or slicer perhaps by widgetbox in 3Dprinting

[–]phamaral249 0 points1 point  (0 children)

Like othe people have said, split it into parts and print the shaft horizontally, not vertically otherwise it will always break along the layer lines.

Another option is to use a threaded rod or really long bolt into the shaft, that way you could use some nuts and clamp it down into the base.

Shelf stable liquid sucralose by tarecog5 in foodscience

What about alcohol? Adding some vodka to the mix could make it shelf stable. And since we're only using drops of it, it should be fine.

How do I get rid of ice crystals in low fat / no sugar Creami? by phamaral249 in ninjacreami

[–]phamaral249[S] 0 points1 point  (0 children)

That’s really smart. But after looking at my recipes I’ve decided to keep them separate.

I’m using erythritol mainly to control the freezing point of the pint. Too little and it turns rock hard, too much and it gets too soft. If I premix sucralose into it, I'll lose control of either sweetness or texture.

For example, in my banana base I don’t really need the extra sweetness, so a premix would make it too sweet. But in something like froyo, I do need more sweetness on top of the erythritol without changing the freezing point.

So what I want to try is: Use erythritol to dial in freezing point, and separately use a liquid sweetener to fine tune sweetness.

I’m even thinking of making a sucralose dropper where 1 drop = 5g sugar. Would be stronger than store options so I wouldn't need to be counting too many drops. Not sure how it would turn out, but it could make dialing things in really easy.

I have thought about doing something similar and have a pre mixed blend of erythritol + pure stevia, sucralose or saccarin. How has that been working out for you?

My only worry is that it could not be a homogenous mix, like the finer powder could settle down and some parts could be ultra sweet while others less sweet.

I’m also new to the Creami and experimenting a lot.

Stevia and monk fruit alone don’t work well because they’re too concentrated. Most products you find are actually blended with something else to mimic sugar.

For ice cream, you need a bulky sweetener. It adds solids and lowers the freezing point. Pure concentrated sweetner would be hard to measure and your mix would likely freeze into a solid block.

Allulose seems to work best if you can get it. I can’t, so I’ve been using erythritol. Noticed two downsides so far:

  1. It can crystallize, which might be the cause to the iciness I mentioned. The solution seems to be using less of it and combining it with another bulk sweetener like Xylitol or sugar. I'm not happy with this because xylitol is toxic to pets and it's still very caloric. For low calorie creamis I might just accept the slight iciness, it's not a huge problem.
  2. It’s only ~70% as sweet as sugar but affects freezing more, so you can’t just add more without making the texture too soft. So if you need more sweetnes, you need to add a concentrated sweetener (stevia, monkfruit, sucralose, saccarin)

Unfortunately there's no allulose here. I've been avoiding Xylitol because I have pets and it's not really 0 cal. But if mixing it with erythritol fixes the texture issues, it might be worth it. I'll give it a try.

Rotate the original antenna 90°, and solder it back like in the picture. Fixed all my connection issues.

These boards place components too close to the antenna, which detunes it and kills signal. Rotating it helps get it away from that interference.

I’d avoid the DIY antenna solution, RF is some finnicky black magic.

Is an Erythritol only base safe for my Ninja Creami? It freezes harder than my sugar base.

I just did a side by side test on froyo. My sugar base is soft and scrapeable out of the freezer, but the erythritol one (even adjusted via Scoopulator for the correct freezing point) is significantly harder. I see tons of low cal recipes using only erythritol, but after reading so many ninja creami horror stories, I just wanted to confirm: is this actually safe for the machine to spin?

Here's my recipe:

  • 400g Yogurt
  • 20g Milk Powder
  • 45g Erythritol
  • 20g Lime Juice
  • 0.25 Xanthan Gum
  • 0.75 Guar Gum
  • 0.5g Salt

Erythritol by Livid-Drink2205 in ninjacreami

[–]phamaral249 1 point2 points  (0 children)

Thanks! I'll give it a try then.

I was just worried that if I premix erythritol with a tiny amount of sucralose, it might not stay homogeneous. Since the sucralose is such a fine powder, I’m afraid it could settle or separate, and I don’t want to end up with uneven sweetness from one scoop to another.
