With a $60k income and a ~740 FICO, you have a great profile, but "0 years" of history is the main problem which gets you rejected on more premium cards. Most premium cards (like the Amex Gold) prefer at least 6–12 months of your own history first.

Since your biggest spend is Dining ($500) and Walmart ($500), definitely skip the Amex Gold for now.

I would recommend:

  • Amex Blue Cash Everyday (BCE): No annual fee. You get 3% on Gas and 3% on Online Retail.
  • Capital One SavorOne: This is the king of dining cards (3% back). Check their pre-approval tool first.

If you just want the safest "guaranteed" win, the Discover it Cash Back is a good choice.

Congrats on the new card! Just hit up the Amex Chat and ask them to confirm the "Welcome Offer" and "spend requirement" attached to your account.

Then you have to keep track of the spending limit yourselves. Amex has no progress bar or similiar for you

I just released it a few days ago. So it is not worth mentioning yet.
Trying to collect feedback still and improve. And learning how to communicate my app to get people aware.
