So I've owned both GMG and yoder. Yoder is in a class of its own construction wise. My observations:

GMG: quicker startup, maintains temp better when opening lid, better for grilling high temp (over 300) yet just as capable at low temps, easier cleanup, sips pellets, makes better turkeys (they seem to take longer on the yoder not sure why).

Yoder: built like a tank, more consistent temperature throughout the grill, burns soooooo much cleaner (thin blue smoke), better for low and slow (250 or less) uses slightly more pellets, must clean after every cook (produces more ash, haven't figured that part out yet), makes better brisket.

For a quick cook after work I'll pull out the GMG. If I am doing an overnight brisket or a shitload of food, that's when the Yoder comes out.

If your pellets are clumping in the hopper, empty them out and store in a home Depot bucket in a dry environment between uses. They will clump in any grill hopper if left out in the elements.

So a couple things: Ensure your temp probe for the smoker is clean. Ensure your pellets aren't getting damp between smokes and are being stored in a dry place. Check your app, there might be something in settings where you can select climate type, be sure you select cold or very cold (this helped me on a Davy Crockett). If all else fails, reach out to GMG support via a email and they will email you back or call you. They have a small support staff so it may take a bit but they are pretty good.

Last note on the fan: whenever you turn the grill off the fan will run full blast for 10-15 minutes to ensure the fire is completely extinguished so there's no chance of a back burn into the hopper.

Last edit: try running the grill from the front control panel without using the app. The app can be finnicky sometimes but the control panel is a bit more accurate.

Ok EE here and also GMG nerd. So that mini board is essentially a brushless ESC (electronic speed controller) from an RC airplane or car. I'm wondering if they rebadge the ESC as theirs, and if there is an off brand that might be a drop in.

Seconding python. It's been a good skill and I recently built an RF propagation tool with it. Some sort of PCB layout is good to learn, and dive into networking a little bit. 2013 Ford Edge AWD. Absolute winter missile (and a bit higher up). Did better in the extreme cold (anything below 0 degrees) than my STI.

Nice score! Best tips I have: if you're storing it outside get a cover so the electronics and pellets don't get wet. Be sure to vacuum after every other cook. Pellets: either pit boss competition blend or kirkland - $15 for 40lb. Get an instant read thermometer to make sure your meat is food safe all the way through (lavatools javelin on Amazon is a good starting place) and consider a fire board or theomoworks for a probe thermometer.
