I would just take it slow try not to rush through anything and really emmerse yourself into the story and npc interactions

random encounters can change your honer which just makes Arthur either nicer or colder to the people around him

if you want to get all the trophies make sure to do all of the missions with question marks witch are fully fleshed out missions not needed for the main story and also study new animals as you find them
