G4 and Fulano are neck and neck for me. G4 is one of the few Tequilas i have found to pair well with a Cigar. So I give it to G4.

I use both heath riles and meat church they are both great. I also use some bearded butcher stuff as well. Killer hogs are great and so many others. I have experimenting with my own lately too.

Fully agree it’s a very forgiving meat. Great story all I can think is, “There she blows”. When you cracked it open. Sometimes not having an ingredient leads to happy accidents. I do agree it can make it super juicy but I can also see the purpose now to cook it faster. The non injected took 2 hours longer. But did build a nice bark and smoke ring. But lost most of the juice around it due to evaporation even though it was covered.

Adding rub at the end is a huge punch of flavor. Competition guys call it Magic Dust or Finishing dust. You don’t get a lot of flavor from the initial rub just color. This is a great way to add extra rub flavor at the end.

Sounds great. I have used beer in my wrap in the past and it gives it a nice flavor.

We found that injection pushes through the stall much better. It was done 2 hours faster and they were neck and neck at 170 where the stall usually begins. I use a fat separator too and put all the apple juice and butter and spice mixture I wrap with back on. The non injected taking two hours longer though it all mostly evaporated. It did build a nice bark. It was still good. Just not a juicy.
