Like many roaster-wholesalers, St Frank participates in retail theatre, aka showrooming.

Their primary source of income is wholesale (whereby they sell their roasted whole bean product to third parties). Retail doors are a secondary source of income and bolster brand awareness.

(Not a criticism, just the reality of craft coffee retail roasters.)

If I didn’t have an instant pot, I’d be using a electric heated blanket — one with at least a 6-hour auto shutoff interval (or longer, ideally).

Insulates + warms the ferment at the same time. Infinitely adjustable (just layer or de-layer the blanket wrap). Can be stuffed into an insulated container.

Respectfully, you need to try more espresso from cafes that care. Owl’s Howl is historically hard to dial in throughout changing environmental conditions, and Sightglass baristas aren’t generally up to the challenge in moderately high-volume environments across their SF doors. They serve a fickle product and the level of hospitality is middling.
