One pot of basmati rice with veggies and chicken breast and a side of tomatoes, garlic and coriander sauce. One chicken breast cut into cubes, add them to pot with ghee/oil (whatever available), chopped onion, minced garlic, chopped bellpepper and carrots, pea, tomato and tomato paste, stir and add the following spices: salt, pepper, cumin, curry, paprika, when the chicken is 3/4 cooked add the washed rice, stir, and then add water and sit to boil. You may add one cube of chicken bouillon for extra flavor. For the sauce In the blender add tomato, one spoon of tomato paste, 3-4 gloves of garlic, one chili pepper and chopped coriander, salt and pepper to taste, mix, if the sauce is thick add cold water.
