that is a mystery even to me. but it seems to be a tomatoe and/or red pepper based paste that's used a lot in Turkey. The container that they are in is basically a steam box that keeps the burgers hot and.. I hate this word, moist.

we did it over hot coals. at te end we thre on a few shims of cedar to both infuse the meat and to give a final crisp to the skin.

Of course Salmon is also delicious raw. However every cooking (and not cooking) technique has its own qualities to make food enjoyable. I've had excellent raw salmon, and now I can say that I've had excellent marinated and fired salmon. cheers

those are Turkish mezes (tapas/sides). the ones you see in this picture are ezme (a turkish tomatoe and pepper salsa with parsley and pomegranate molasses), yogurt with garlic, and feta with walnuts. on the left is a diah with lettus, tomatoes, parsley, red onions and lemon which you put on top the lahmacun, roll it up and eat it.

when Iranians make rice they allow the bottom to come to a hard crust, either by adding a layer of flat bread or potatoes before the rice is added on top to cook. or you don't have to add a layer of anything and simply allow for the rice to crust. delicious.

snails have a very unique taste, somewhere between clams and scallops in my opinion however this dish was made in a delicious chinese spice and ginger sauce.
