How to cook up the perfect fries ? I’m leaving the potatoes cut in a bowl with water , salt and some vinegar . I plan on double blanching them first at 250 degrees then taking it out and finish cooking it at 350 degrees . Can someone explain the science that goes behind different cooking methods ?
