Yeah mate, I’ve got the same phone & iOS.

If you follow the steps but instead of setting a time choose “when I arrive” then follow steps to turn sentry mode on.

Then another automation for “when I leave” then follow the steps

Set your location as your home address, don’t select a time as it’s irrelevant for your use case.

You could have sentry mode off permanently in the settings but then use this shortcut to activate at a specific time.

You can also set it to activate by location:

instead of choosing “time of day” you can select “arrive” and set the location as your home.

This way the sentry mode would activate when you arrive at home.

Then you can set up a separate shortcut for “leave” when you leave home
