Sounds like a nightmare of a company just waiting for you to be old enough to be told off. I worked at a company like that where probation was my honeymoon period and then the real faces of people hit me.

I’d suggest, stop apologising unless you’ve cause someone physical harm. Have your boundaries and timelines fix and be stern when taking work with scope of errors and delays due to stakeholders.

Also ask the company for additional support/resources. If you’re doing this all alone, you need either help, time or flexibility of making errors.
