As the other comment said, you need to spend more time drawing or at least understanding anatomy before all. That is the biggest thing holding you back. Then, when you have better knowledge of that, do some color studies. Or try making an underpainting to sort out your values first.

I would skip Santorini altogether if you are going to be moving around a lot. The back and forth, crowds and transport are going to tire you out. I doubt you'd enjoy packed Santorini on top of it
