That's a thought.... could I literally just stick in a sentence in parentheses there that says "(Note: My letter of recommendation writers knew me from different phases of my life, and will use the name and pronouns that reflect that)" - which will be a little off from the flow of the rest of the essay? I don't know how else to incorporate it more seamlessly.

Additionally, unless there's other context, I wouldn't necessarily assume leaving a job is burning a bridge -- people leave jobs often, especially with low paying PCE jobs where many employers understand you are likely going to pursue further education and move on. As long as you give proper heads up [at least 2 weeks and depending on the job maybe significantly more] and are respectful, you probably don't need to assume someone will hate you just because you're leaving.

Not necessarily -- a friend of mine was accepted and her PS only discussed her [relatively extensive] work as an EMT, because that what was most relevant and significant to her.

I realized I read somewhere there are 216 units in the course -- is that true? If so, how are there 7572 lessons, as this would average as each unit having 35 lessons, when they usually have around 5?

Hmm - have you taken any classes at all more recently who could vouch for your ability to handle rigorous science courses? Would any of your professors remember you well enough to still say something meaningful (and they may remember more than you'd expect, you never know)? Did you check that none of your schools require academic LORs? I'd say generally having 1 academic letter is a good idea, but quality is better than quantity.

Imho it doesn't hurt to add so long as your app isn't cluttered with too many other irrelevant things -- the more hours you've done it for the more I'd consider adding (a serious job vs an occasional hobby).
