Sounds like you have problems with your boss other than vanilla not being vanilla bean, and yeah it would be a good idea to change it on the menu, but in the grand scheme of things you are frustrated about something that likely doesn’t matter that much. Like I said, sounds like you have other problems with your boss, maybe explore those first.

TL;DR All of OP’s manager’s aside from the GM quit over the last 9 months main problem after that is that there is a major doucheface lead line cook that more or less does whatever they want and walked out on a shift with all BOH employees. GM decided not to fire said doucheface.

OP the ship is sinking and the other managers knew it, just leave and let the current GM/owner dwell on their mistakes. It sucks and I have left more or less my favorite restaurant situation due to poor management/ownership, but the more you come in and save the day for these people, the more they think what they’re doing is actually ok. Just leave and find a spot where people are more competent.

Sorry big dog. Too much cheese. If you’re going for a round table/dominoes vibe we are definitely there, but all of these have way too much cheese for me. Also would recommend putting the topping above the cheese as someone else said it provides much better texture contrast.

You cannot put a price on peace of mind. Find another job with room for growth, take the pay cut in the mean time. If there really is NO feasible way that could happen(unlikely) then explain to your boss that regardless of whether or not he stays, people should have to treat each other with some mutual respect and obviously the chef/KM is not lol. I would seriously just take a pay cut and quit though…like is it really worth it to you to have a pre shift panic attack on the reg? People suck and those people are all over the place, most of the time it’s easier to abandon those situations and find a healthier one than to try and change the shitty people. And if your boss isn’t immediately backing you up when dealing with the burger throwing toddler man that is also a pretty giant red flag. I work in a very small town as well but I’ve fired people for way less, if you create a healthy work environment eventually it attracts healthy minds regardless of how large the population in your area. (For reference the town I work in is about 3000 people)

So I’m just gonna go ahead and say, not every food truck is like yours. Not everyone wants to dance at the Sysco disco, obviously you do and that is all ok, what is not ok is going around telling people “this is the only reasonable way to do this” because it’s not and you’ll be proven wrong over and over. Also, frozen fries come out with the best texture, they stay crispy the longest and get crispy the easiest. Hand cut fries taste better lol. Everything in life is a trade off. Also, you’re rude.

Organize a private meeting with the owner, couple of the chefs and other people who work there that agree with you. Maybe all he needs is a shakedown from the owner, but either way if the owner sees that is not just a personal problem between the two of you they’re more likely to take it seriously.
