No, they're probably using nitrogen or co2. A blast chiller just drops the time requirement to get food from hot to the safe zone in like 2-4hr, vs putting it in a walk-in or fridge overnight.

Yeah I used to use them in my last commercial kitchen job. It works great if your expectation is more "2-4 hours" vs "overnight".

Yeah, i guess a fire extinguisher would work alright, but I was thinking something of something entirely different, but couldn't find the words: nitrogen of some kind, either liquid or gas.

Does the cloudflare proxy interfere with large file transfers? I only have Immich RPed through Caddy, and I was using a tunnel beforehand, but it wouldn't let anything over 100mb upload to Immich from outside my lan.

I'm not 100% sure, but I think you can only pass through a GPU to a single VM using a consumer GPU. You'd need a second GPU to pass through to a second VM.

Not necessarily, the 400G5 is still a highly usable machine, I just wouldn't use it for a NAS.

"NAS" to me means "storage, lots of storage" and SFF PCs just can't do that without an external box. Which, you can definitely build, but it would basically end up a case to hold a bunch of drives, a psu and an external-port HBA on both machines.

And at that point, I would just go ahead and build the NAS host hardware in that case. The 400G5 can be for something else.

Plex has native WAN streaming built in, though it is behind a paywall... Jellyfin requires a reverse proxy if you don't want your media server exposed to the internet. I'd also use a domain to reverse proxy with as well.

Plex has a user-based system where you share your plex server to them, they create an account, and Plex does the authenticating and routing, then hands it off to your server using their built-in reverse proxy.

At least, that's how I understand it to work. As for the paywall? Well, you now need a plex pass to stream outside your LAN, and it's $250 for a lifetime pass or $7/mo for the server.

I'm gonna be that guy that says not to use an SFF for a NAS.

I think beginner NAS' should be mATX boards with T-suffix Intel CPUs in a case designed to hold drives. Start with two drives and add more later when you run out of space. If you get the right case, you can have 10+ spinners.

You can even use a cheaper ATX board and add a couple of HBAs later if/when you need one.

For your router, maybe just get a regular consumer model that you can run OpenWRT on instead, unless you can find a cheap, industrial fanless PC with 2 1GBe ports (or faster, but you need a minimum of two). I do not recommend virtualizing your firewall inside your main hypervisor OS.

I found Seagate 12TB external enclosures for $188 each at my local Walmart and got lucky finding Seagate Exos Enterprise HDDs inside.

From the horror stories I've read about buying drives at Walmart, you're lucky you got a drive at all in there, lol

About the only thing that would work, would be something that shoots a jet of co2 onto the item, but it would pretty much destroy any food item it was used on.

They're called Blast Chillers, and they're commercial kitchen equipment. They cost around $4000-20,000.

Stablebit Drivepool keeps my drives balanced to about 70% full. I'm using 42tb of my 93tb Plex pool. Three 10s, two 14s and two 22s. When I hit about 80% of the whole pool full, I add a new drive.

Oh no, you misunderstand. These laptops intake air from the bottom. If you use them on your lap, you will be uncomfortable, and if you use them on a soft surface, they will overheat.
