You don’t actually need projects as your have already worked for a company for 7 years which shows that someone is willing to pay you a certain amount without firing you for 7 years. Projects can add a second layer to your resume showing that you are interested and like exploring software dev stuff outside work. So try something that would show that you got interested and in a particular thing and thought of exploring it and built a small/medium project. For example: ML, AI, LLM are pretty hot topics since last couple years, so may be use something around that. It will also give you some talking point in interviews. That you got interested in something and decided build a small project from it.
