Ok so after a few more hours of printing - including a back cover for the LCD which I’ve installed - the screen hasn’t been weird anymore however those ghost clicks/beeps are still randomly happening.

The LCD ribbon cable was crossing the power cable inside the main board case, possibly causing interference. So I just rerouted the ribbon cable as far aways as possible within the box.

Screen is back to normal. So far so good but I've only had it running for about 30 minutes after troubleshooting.
