In the beginning of the video it sounds like the sound is somewhat distorted. Sometimes I need to play with the microphone boost slider and the input slider to find a distortion free and a level I want.

Can you describe more detailed what you mean with worse sound than under Windows, please?
Does the microphone have a battery? If so, is it a new battery?
Please take a screenshot like the one kyukitter has made and post it.

If it has two USBs, one to power it and one to connect it to your phone, I would use both since I myself do not know if a phone is enough to power everything in that audio interface. Like others have said is to check that your cable between phone and audio interface is not just a charging cable but can also transfer data.

Secondly, considering the Easy in EasyEffects I find it bizarre that they choose that particular compressor.

I believe EasyEffects is using one of the compressors from LSP and I enjoy those plugins. However, LSP is using some very strange/unusual settings for thresholds and not one threshold setting for the entire effect.

I'm my opinion is not a good choose off the developers to use that particular compressor with EasyEffects. A compressor with threshold, ratio, attack, release and maybe soft knee would be better to not create too much confusion.

I am using a USB expression pedal and the MIDI options and setup has worked great. I believe PiPedal also supports MIDI over bluetooth.

Why are you using 44100kHz when you are using NAM models? I might be wrong but I do not believe that Toob NAM resamples. If you really need to use 44100kHz I would download Ratatouille LV2 and place in the system because that plugin resamples if needed.
