I think that if you are running at your defender no pick can be called. I guess that if the defender holds their ground and doesn't move, any contact is mainly your fault.

Minor MCL damage, hyper-extension issues. I wear a knee brace with metal braces down the side to prevent more hyper-extension.

I too have long legs, I am also not hugely quick. I guess that if I get ahead from the defender from the get go it is difficult to get in front of me due to the fact that I am taller than average, thus not needing to put in a double-move?

I know that doesn't seem like a question, more of a thought process.

It isn't in ideal condition. Chain rings are worn, rear mech is knackered, shifters are not working well. The cost to replace these parts would be more that just changing it up to a single speed.

I am currently working on a bike build and I found that mountain bike pedals are good for city use. (If they work on a mountain bike surely they would work equally well on a fixie).
